One experience not to be missed in the Basque Country is a Txotx (“Choch”) at a local Cider maker. A Txotx is basically the ceremony of getting cider directly (think the spray from a water hose) out of the giant barrels in which they were made.
Many Basque Cider producers have a restaurant and also offer typical fare, like at Petritegi in the Astigarraga neighborhood just outside of San Sebastian.
